Sonia has been selling coffee on the differentiated market since 2005, however, she struggled due to the lack of local organisation. Only a couple of years ago in 2019-2021 Sonia was forced to sell her coffee en verde (depulped but not dried) due to financial family emergency, removing selling power for cash in hand.\u003c\/p\u003e\n\u003cp data-rte-preserve-empty=\"true\" class=\"MsoNormal preFade fadeIn\"\u003eHowever, thanks to MonKaaba and the collection of small holders in recent years Sonia like many other producers has been able to learn a lot more about production of specialty, increasing her mark on the industry. Semilla and MonKaaba guarantee that Sonia can continue to sell her coffee at differentiated pricing.\u003c\/p\u003e\n\u003cp data-rte-preserve-empty=\"true\" class=\"MsoNormal preFade fadeIn\"\u003eThis coffee boasts a deep, jammy profile with a lot of red fruits and deep red florals. We love this kind of coffee, and her notes are the ones we used for our black cap as for us it is one of our favourite coffee flavour profiles. They are then de-pulped and left to dry ferment for another 36 hours. Damian is a member of the initiative of MonKaaba, an agency driven collective of producers in San Agustin. He is also a roaster for MonKaaba and part of the QC team. In March 2026, Damian will be joining us here in Portugal for a few days to roast, taste and brew with us – we are super excited for this. If you are looking for a meticulously processed washed coffee for a bright filter or espresso, this is the one. However, back in 2019 Semilla were told about traceability to local small holdings on the hills near a washing station owned by Emanuel. To further enhance quality, flotaAon was carried out, separating dense, premium cherries from lighter, lower-grade ones. The processed volume was promptly documented to guarantee full traceability. The selected cherries then underwent an extended 72-hour dry anaerobic fermentation, conducted in sealed plastic barrels positioned under shade. This method enabled precise temperature regulaAon while maintaining a water-free environment. Upon completion of fermentation, the cherries were removed from the barrels and relocated to drying beds. A second round of manual hand-sorting was performed to eliminate any remaining imperfections before final drying. This rigorous quality-focused approach ensured uniformity, protected bean integrity, and\u003cspan class=\"s1\"\u003e\u003c\/span\u003esupported consistent flavour development. This is our first year with this coffee and we are so happy to have it. The profile of this coffee maintains that citrus, sweet structure of the Cruz Pata, typical of this region. However, we find that the Soncco has a much louder florality to it, singing like a perfume in the cup.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eArmando is now in his 50’s and has been producing coffee since childhood, his approach pays homage to tradition, avoiding experimentation, with controlled processing to get a perfect clean cup, leading to year on year consistency. The papers have wide pores that take up a large amount of the surface of the paper, this is noticeable as a comparison from the light and dark roast filters however it does look very similar to the pore pattern on the Abaca papers. The inside seemingly is the complete inverse of the exterior with the ridges extruding into where the coffee bed would be.  \u003c\/p\u003e\n\u003cp data-rte-preserve-empty=\"true\" class=\"preFade fadeIn\"\u003eThe result was a bright, vibrant, balanced cup with a pleasant acidity, in the blind cuppings we were able to find this almost every time, only confusing it with the Abaca papers. Despite Uganda being the Africa’s largest coffee exporter (as of July 2025), it is not particularly known for its differentiated coffee, most regions such as Rwenzori typically sold on the commodity market. Only areas near Mount Elgon were known for exporting specialty coffee. The four coffees we are bringing from Rwenzori we hope will shine a light on this region, showing a diversity of profiles and characteristics that perhaps are not traditionally associated with this region.\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003eEmpaako’s core team is formed from Eli (founder), Immaculate (head of processing), Stanley (agronomist) and Nyakto (accountant). This team aim to provide all members and farmers working with the group the tools and knowledge they need to ensure a more lucrative future working with coffee.\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003eThe aim of this project is to create a farmer lead supply chain. Farmers are usually the most vulnerable member of any supply chain relying on producers to collect, process and sell the coffee; Empaako aims to shorten this gap from farmer-producer to give farmers greater agency in their chain, giving full transparency and traceability to the farmer by allowing the farmer to actively partake in these latter stages of the chain.\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003eAnother aim of the Empaako Collective is to ensure producers receive their money in full, at each station the harvest data of every single producer is collected, and shared, to show full transparency* from what each farmer collected and what they were paid for it. Each farmer gets the same price per kg cherry delivered paid in full directly to the farmer.\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003eThis coffee is juicy and has a very delicate finish, a lot of fruits in the front with a complex tea like finish. Despite Uganda being the Africa’s largest coffee exporter (as of July 2025), it is not particularly known for its differentiated coffee, most regions such as Rwenzori typically sold on the commodity market. Only areas near Mount Elgon were known for exporting specialty coffee. The four coffees we are bringing from Rwenzori we hope will shine a light on this region, showing a diversity of profiles and characteristics that perhaps are not traditionally associated with this region.\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003eEmpaako’s core team is formed from Eli (founder), Immaculate (head of processing), Stanley (agronomist) and Nyakto (accountant). He understood the region had great opportunity and approached the entire project with love for not only the trees, soil, environment but also creating a micro-economy to benefit everyone involved. Gideh provided access to knowledge, seedling and assistance to surrounding farms. Pushing the local community to develop churches, schools, hospitals and roads. Gidhe used coﬀee to transcend a basic commodity and make real change in a real community. In 2004 Gide and Abiy met. Abiy acted as a local ambassador, informing everyone in the region and beyond about the project. Abiy provided a perfect symbiotic partner to the Limmu Kossa project that was already making accruable change at origin.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eWhen trying to find a project that we wanted to work with in Ethiopia, it was admittedly a complicated process. Typically, the projects lack the structural simplicity or transparency that we feel comfortable working with. The growers\/farmers at origin who are periphery small holders in Ethiopia do not have easy access to the diﬀerentiated market. We worked with a few Ethiopian projects, but none that felt like a 100% match. Finding farmer driven chains such as those established by Sakami or those in the works by Empaako or MonKaaba is important to us. This gap is important to us because often when we would ask importers for FOB we would be given a number that was often more than double the farmgate price, with exporters taking a cut greater than what the growers would obtain per kilo of coﬀee.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eGideh is doing exactly that in Galeh, shortening the supply chain forming lasting relationships with local growers creating meaningful change in the way coﬀee is transacted in this region. With much of the profit from these projects being used on healthcare, \u003cspan class=\"s2\"\u003e\u003c\/span\u003eeducation and access to training for farming and agronomics. To facilitate long term change for growers to export their coﬀees at premium prices. The local community have named Gideh „Abba Ollie“ which translates to „he who uplifts“ as a recognition for the work he has done for the local community and those around him.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe landscape of the farms are by all measures phenomenal, we have not yet had the chance to visit, but we have seen many photos, the coﬀee trees grow wild, with their rich genetic lineage, with natural varietal heirlooms growing under ancient trees. This coﬀee is the exact image we think of when we picture „shade grown coﬀee“, in this rich native forest home to incredible microclimates. The land does not need inputs, everything the coﬀee needs to grow is already there, the land provides.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eWhen talking to our friends at ThisSideUp about our concerns with working with Ethiopian coﬀee they expressed a similar sentiment to us. At von\u0026amp;vonnie we find ourselves in a place excited about the future of working with Ethiopian coﬀee once again, a region that produces our favourite coﬀees every year. We have searched for a long time to find a project we believed in that addresses our concerns in production and the supply chain.\u003c\/p\u003e\n\u003cp class=\"p1\" style=\"text-align: center;\"\u003e\u003cem\u003eFarmers who work in this area are highly committed to the sustainable use of the forests. Still, they often need more income to avoid logging and unsustainable forest exploitation. To Gidhe, growing coffee seemed like a perfect solution, and so, as with his other projects, he embarked on this adventure. The region's rich soil is the only solace for its inaccessibility - coffee can only be transported out of the farm by slow but reliable donkeys and mules. Added to this, the processing can become compromised because of the constant rain (it rains 9 months a year!). Aside from the complex juiciness and changing flavour profile there are two significant things that really make this coffee stand out for us:\u003c\/p\u003e\n\u003cp class=\"p1\" style=\"padding-left: 40px;\"\u003e1) Being a natural processed coffee – if you have been following us for a while you probably know that we tend to lean towards washed coffees, however, every year that we try this coffee it really blows us away. Morgan calls this his favourite ever natural coffee. It is in general unique to find naturally processed coffees from Kenya. \u003c\/p\u003e\n\u003cp class=\"p1\" style=\"padding-left: 40px;\"\u003e2) This coffee is also a single cultivar microlot of Batian, which is usually found as a blend component with other Kenyan varietals. Batian is one of the youngest coffee cultivars that is frequently used within the specialty industry and is an offshoot from SL34 crossed with many other varietals (see \u003ca href=\"https:\/\/varieties.worldcoffeeresearch.org\"\u003eArabica and Robusta Coffee Varieties\u003c\/a\u003e). When we isolate this varietal, we get incredible juiciness with a tart finish that is truly mesmerising.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003e\u003cstrong\u003eAbout Sakami\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eWe have been mesmerised by the work of Sakami since long before we started von\u0026amp;vonnie, the coﬀees we work with such as the Batian microlot from Gloria and now also her SL28, are a fantastic representation of the care and love that this group put into their coﬀee. Sakami is admittedly a project that we fell in love with because of the way the coﬀee tasted, but then the more we learnt the more we fell in love with the work they are doing.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eSakami is located in the Trans-Nzoia county and operates with a diﬀerent model to traditional Kenyan coﬀee, where usually lots are a collation of thousands of small holders. The lots at Sakami are larger, single farmer lots with much greater transparency and traceability to show who is involved in these projects. It is an area that was not seen as being ideal for coﬀee growing, but Sakami are pioneers in recognising this region as a fantastic area, with 1,800Masl average altitude, cool temperatures and volcanic soils being perfect for Arabica.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe project was founded by Gloria Gummerus, who’s name you will surely recognise from our bags, she is one of the producers of the group, but not the only one, Rosabella, Jane, Shantelle to name a few are also producing exceptional coﬀees that we hope to one day also showcase.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eOne of the fundamental diﬀerences is that Sakami operates on its own to market and sell its own coﬀees, allowing them to extract greater value from the supply chain. Recently we had the opportunity to sit with Gloria and her husband Jarmo to talk about the project, it is really inspiring, they do not only produce coﬀee, despite it being their key commodity, but also they are producing avocados and macadamia. Gloria told us that she is currently trying to sell avocados in the European market.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eSakami separates itself from traditional Kenyan supply chains by oﬀering dry processed coﬀees as well as wet, Kenya is typically known for washed coﬀees, but we have become infatuated by the naturals coming from this group as they are truly rich in red fruits. They \u003cspan class=\"s1\"\u003e\u003c\/span\u003ealso oﬀer single cultivar, which we particularly enjoy as typically we see SL28, 34, Ruiru 11, K7 and Batian as blends, but when we get them individually, they really sing in their own ways with fantastic fidelity.\u003c\/p\u003e\n\u003cp style=\"padding-left: 40px;\" class=\"MsoNormal preFade fadeIn\"\u003e\u003cstrong\u003eAbout the processing: \u003cmeta charset=\"UTF-8\"\u003e\u003c\/strong\u003eRipe coﬀee cherries are handpicked and then spread out to dry in the sun with the fruit still intact. This drying process, which can take several weeks, ensures that the cherries reach the desired moisture content. Once fully dried, the outer fruit layer is removed through hulling to reveal the green coﬀee beans. Sakami is admittedly a project that we fell in love with because of the way the coﬀee tasted, but then the more we learnt the more we fell in love with the work they are doing.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eSakami is located in the Trans-Nzoia county and operates with a diﬀerent model to traditional Kenyan coﬀee, where usually lots are a collation of thousands of small holders. The lots at Sakami are larger, single farmer lots with much greater transparency and traceability to show who is involved in these projects. It is an area that was not seen as being ideal for coﬀee growing, but Sakami are pioneers in recognising this region as a fantastic area, with 1,800Masl average altitude, cool temperatures and volcanic soils being perfect for Arabica.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe project was founded by Gloria Gummerus, who’s name you will surely recognise from our bags, she is one of the female producers of the group, but not the only one, Rosabella, Jane, Shantelle to name a few are also producing exceptional coﬀees that we hope to one day also showcase.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eOne of the fundamental diﬀerences is that Sakami operates on its own to market and sell its own coﬀees, allowing them to extract greater value from the supply chain. Recently we had the opportunity to sit with Gloria and her husband Jarmo to talk about the project, it is really inspiring, they do not only produce coﬀee, despite it being their key commodity, but also they are producing avocados and macadamia. Gloria told us that she is currently trying to sell avocados in the European market.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eSakami separates itself from traditional Kenyan supply chains by oﬀering dry processed coﬀees as well as wet, Kenya is typically known for washed coﬀees, but we have become infatuated by the naturals coming from this group as they are truly rich in red fruits. Once dried, the beans are hulled to remove the parchment layer, revealing the green coﬀee beans inside. Finally, the beans are sorted and graded by size, density, and quality. Celebration of these fantastic projects and coﬀees is incredibly important to us and paying a fair price for these coﬀees reaﬃrms that coﬀee production can be an economically sustainable career.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003e\u003cstrong\u003eAbout Wanza\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eWanza oﬃcially formed in 2017, following the Tanzanian legislation giving export licenses to producers, by Rebecca Trupin, This Side Up and Frank Mlay, with a key aim of the project to give access initially to the Aranga group access to a diﬀerentiated market. Since then Wanza has started working with four more groups: Masista, Marangu, KiliMeru and of course Amkeni. Each of these groups have their own rich heritage but share one key objective – selling their coﬀee for a greater renumeration.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe farmers faced many issues which Wanza and ThisSideUp are aiming to break down, climate change, ageing farmers, quality issues, lack of market access and lack of funds. Recently we had the chance to talk to Frank over dinner about these issues. Frank Mlay is a very impressive individual who helps these groups confronting these problems. One of the key points he spoke to me about was about a lack of young people working on the farms in Tanzania as they do not see coﬀee production as a viable future career so they move to the city to obtain diﬀerent jobs. He made a few jokes about last year and farmers finally earning well because of higher C-price, but it seems that the issue is very real, production in Tanzania does not provide stable enough renumeration to continue production especially as input costs rise as well as costs of living and climate change diminishing returns.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eFrank and the team at Wanza are ensuring that the quality of production in these groups continues to increase as well as helping with a more productive harvest. The group has been investing heavily into empowering women to take up coﬀee productoon in Tanzania, as well as encouraging enthusiasm in younger populations to take up coﬀee production, providing a program called „back to school“ to teach about each aspect of farming and production.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eRebecca has been working to promote these groups (not under Wanza) since 2012, she mentions diﬃculties selling due to quality concerns in the specialty market.
